This quick and easy recipe couldn’t be simpler. Dice about a pound of tomatoes, I prefer plum or Roma tomatoes, but almost any type will work. Add minced garlic, thinly sliced basil, one tablespoon extra-virgin olive oil, one teaspoon balsamic vinegar, salt and pepper to taste. Add shredded Parmesan if you like. Serve on toasted or grilled, sliced French bread.
