I’d say that avocados are having a moment, due to the avocado toast craze sweeping the nation, but their popularity has been growing for decades. An increased interest in healthy eating, the rise in popularity of vegetarian and vegan diets, improved supply chain, and the sheer awesomeness of guacamole have all played a role. What was once the lowly “alligator pear” became the star of many meals, including salads.

Cucumber Tomato Salad with Avocado

This is an easy update to the classic cucumber tomato salad. Just add avocado. The flavors are fresh and clean, and the addition of avocado and cilantro with the lemon dressing just screams summer flavor. But, you don’t have to wait until the summer to make it. The vine ripe tomatoes, crisp cucumbers, and creamy avocado work well with the cilantro and lemon juice to create a zesty, herby, creamy salad. Serve with tortilla chips.

Herbed Avocado Salad

I’m not knocking the cilantro, lime juice, avocado combo, but sometimes it’s nice to try something a little different. This recipe calls for a mix of herbs such as parsley, basil, dill, and cilantro in any combination you wish. It gets crunch from pepitas (pumpkin seeds) and a little kick from fresh jalapeños. When you seed the jalapeño, keep a more of the inner membrane if you like a bit more heat in your salad.
