I’d say that avocados are having a moment, due to the avocado toast craze sweeping the nation, but their popularity has been growing for decades. An increased interest in healthy eating, the rise in popularity of vegetarian and vegan diets, improved supply chain, and the sheer awesomeness of guacamole have all played a role. What was once the lowly “alligator pear” became the star of many meals, including salads.

Avocados are filled with monounsaturated fatty acids, fiber, and antioxidants, which make them super heart-healthy. And so we bring you GR8 avocado salads perfect for lunch and dinner any night of the week. If you love avocados, you’ll love these recipes.

Cucumber Tomato Salad with Avocado

This is an easy update to the classic cucumber tomato salad. Just add avocado. The flavors are fresh and clean, and the addition of avocado and cilantro with the lemon dressing just screams summer flavor. But, you don’t have to wait until the summer to make it. The vine ripe tomatoes, crisp cucumbers, and creamy avocado work well with the cilantro and lemon juice to create a zesty, herby, creamy salad. Serve with tortilla chips.

Avocado Chicken Salad

This recipe comes together quickly, even faster if you already have cooked chicken. It’s a GR8 way to use any leftover chicken you have. Otherwise, follow the directions in the recipe to quickly cook some up. The combination of cilantro and lime is classic and a little cayenne pepper gives it a kick. All the flavors come together for a hearty lunch or light dinner. Double the recipe and take it to a summer cookout.

Black Bean & Avocado Salad

Blacks beans are one of the most versatile legumes, and they go GR8 with avocados. A little lime juice, sweet onions, ripe tomatoes, and fresh cilantro, and you’ve really got something going on. It’s a healthy side dish and can be a filling main meal. The lime dressing keeps the avocados nice and green, but if you make the night before, it’s best to add the avocados and dress it just before serving.

Corn, Avocado, Black Bean Salad

Make this delicious salad ahead of time and wow your guests. It’s great for entertaining at home or taking to a cookout or party. The flavors mesh and get better over time. The corn adds a sweet crunch that highlights the creamy avocado and hearty black beans perfectly. If the flavors mellow too much overnight, add a little more lime juice and adjust the seasoning as necessary.

Avocado Tuna Salad

Ten minutes and seven ingredients, and you have a healthy avocado tuna salad. And it’s naturally paleo, low carb, and even whole 30 if that’s your thing. You’ll probably already have the ingredients in your pantry, so let’s get started. No matter what the occasion, this salad will be a perfect fit. Mash the avocado, chop some veggies, and add tuna and you’re good to go.

Just Avocado Salad

If you don’t like salad getting in the way of your avocados, then this recipe is for you. It’s got three ingredients and avocado is definitely the star. Green onions, avocado, and lemon juice merge to make a refreshing side dish. Don’t be tempted to add cilantro, then you’ll just have guacamole. Not that that would be bad either. Go ahead and use lime juice instead of lemon if you like that more.

Herbed Avocado Salad

I’m not knocking the cilantro, lime juice, avocado combo, but sometimes it’s nice to try something a little different. This recipe calls for a mix of herbs such as parsley, basil, dill, and cilantro in any combination you wish. It gets crunch from pepitas (pumpkin seeds) and a little kick from fresh jalapeños. When you seed the jalapeño, keep a more of the inner membrane if you like a bit more heat in your salad.
