If you’re hosting Thanksgiving and have a few vegans joining you to celebrate, finding something they can safely enjoy may seem impossible. As a vegan, I can tell you that every time I am served something that is more than an after-thought, I get a little excited. Your vegan guests will feel welcomed at your dinner if they know you took the time to make something more than a glorified side dish. And your meat-eating guests won’t feel slighted in the least.

You can make an entire vegan feast with the recipes below, or choose a few to supplement the menu you’ve planned.

Vegan Roast Stuffed with Mushrooms and Lentils

While you can always purchase a stuffed vegan loaf, this recipe brings the concept to a whole new level. Vegans and meat-eaters alike will enjoy this savory roast featuring tofu and lentils. Tender tofu surrounds a flavorful filling of sautéed mushrooms, spinach, and lentils. Chestnuts and cranberries give it a holiday feel. And unlike the store-bought kind, this one doesn’t skimp on the filling.

Vegan Thanksgiving Recipes That Meat Lovers Will Love

Roasted Brussels Sprouts with Shallots and Sunchokes

  • 1 lb Brussels Sprouts, trimmed and halved
  • ½ lb sunchokes, cut into ½ inch pieces
  • 3 shallots, sliced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Almost nothing could be easier than this recipe. Preheat the oven to 450 degrees. Mix all ingredients in a bowl until vegetables are well-coated with seasoning and oil. Spread on a baking sheet and bake for about 20 minutes. Brussel sprouts should be caramelized, and sunchokes should be tender. Place in a large bowl or platter and serve warm.

Mom’s Stuffing Recipe Veganized

  • ½ cup or 1 stick of Earth Balance baking sticks
  • 1 package pre-seasoned stuffing cubes
  • 1 onion, chopped
  • 4 stalks of celery, chopped
  • 2 tbsp poultry seasoning
  • Vegetable broth as needed
  • Salt and pepper to taste
  • 1 cup roasted chestnuts (optional)
  • ½ cup chopped apples (optional)
  • ½ cup dried cranberries (optional)

Melt butter in a stockpot. My mom always started with a stockpot, so she could mix everything together and only use one pot. Sautee onions and celery until soft. Add seasoning and rest of ingredients. If stuffing seems dry, add vegetable broth. I like to make mine on the soupy side, so it doesn’t dry out during cooking. Place stuffing into a baking dish and bake for 40 minutes in a 350-degree oven.

Roasted Garlic Mashed Cauliflower

Of course, you can serve mashed potatoes and make them vegan by using plenty of vegetable broth for flavor. But sometimes, when a meal is as carb-laden as the traditional Thanksgiving feast, I like to serve mashed cauliflower instead. Made with just 6 ingredients, this cauliflower swap is easy to make, and even easier to eat.

Vegetable Wellington

This is a great dish to bring when you are a guest at someone else’s Thanksgiving feast. Or serve the next day for visiting relatives. Once I stumbled upon this recipe, I couldn’t help but think up all the occasions I could serve it. You can even use it as an alternative main dish for your own Thanksgiving meal. Use store-bought vegan pie crust or puff pastry dough. Or make your own if you want to be super fancy.

Vegan Gravy

I went for years without gravy until I found this recipe for vegan gravy. Let me rephrase. I went for years without good gravy until I found this recipe. Even better, this recipe is also fat-free. I know, it’s Thanksgiving, and probably not the lightest meal ever, but why not save some fat and calories where you can?
